If you have leftover rotisserie chicken, it’s the perfect ingredient for a quick and easy ‘What’s in the Fridge Sandwich.’ Check in your produce drawer, grab some cheese, caesar salad dressing and throw together a quick lunch so you don’t have to spend too much time away from Facebook.
Today I cut up a small amount of rotisserie chicken breast and put it in a bowl with a little creamy caesar dressing (I like Marzetti’s but any brand will do –unless you’re talented enough to make it from scratch). Add some pepper, a little lemon juice and mix it up.
For bread, you can use something like Joseph’s Lavash Roll up Bread, a pita cut in half or Pepperidge Farm Deli Flats. That’s what I had on hand today (7 Grain), and it was perfect.
Scoop a little of the chicken mixture onto the bread/roll/roll-up/whatever carby-goodness you’re using. Top with sliced tomatoes, fresh baby spinach and a slice of provolone cheese.
Stick under the broiler for a minute or so ’til melted.
